- 2 cups of long-grain parboiled rice
- 1/4 cup vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced

- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes or 3 large tomatoes, blended
- 3 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 bay leaf
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
- 1 scotch bonnet or habanero pepper, optional for heat
- 1 cup mixed vegetables (carrots, peas, green beans)
- Cooked chicken, beef, or shrimp, optional
Instructions:
Prepare the Rice: Rinse the rice under cold water until the water runs clear. Drain and set aside.
Make the Sauce: Heat vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until translucent. Stir in the garlic, ginger, and bell peppers, cooking for another 2-3 minutes.
Add Tomatoes: Pour in the blended tomatoes and tomato paste, stirring well. Cook for 10-15 minutes until the sauce thickens and the oil starts to separate.
Season: Add thyme, curry powder, bay leaf, and the scotch bonnet or habanero pepper (if using). Season with salt and pepper. Let the sauce simmer for 5 more minutes.
