Jollof Rice

Recipe for Jollof Rice:





Ingredients:

  • 2 cups of long-grain parboiled rice
  • 1/4 cup vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes or 3 large tomatoes, blended
  • 3 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 bay leaf
  • 2 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 1 scotch bonnet or habanero pepper, optional for heat
  • 1 cup mixed vegetables (carrots, peas, green beans)
  • Cooked chicken, beef, or shrimp, optional

Instructions:

  1. Prepare the Rice: Rinse the rice under cold water until the water runs clear. Drain and set aside.

  2. Make the Sauce: Heat vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until translucent. Stir in the garlic, ginger, and bell peppers, cooking for another 2-3 minutes.

  3. Add Tomatoes: Pour in the blended tomatoes and tomato paste, stirring well. Cook for 10-15 minutes until the sauce thickens and the oil starts to separate.

  4. Season: Add thyme, curry powder, bay leaf, and the scotch bonnet or habanero pepper (if using). Season with salt and pepper. Let the sauce simmer for 5 more minutes.

  5. Cook the Rice: Pour in the chicken or vegetable broth and bring the mixture to a boil. Add the rice and stir well to combine. Reduce the heat to low, cover the pot, and let the rice cook for 20-30 minutes until tender, stirring occasionally to prevent sticking.

  6. Add Vegetables: In the last 10 minutes of cooking, add the mixed vegetables and cooked protein (if using). Stir to combine and allow everything to cook through.

  7. Serve: Once the rice is cooked and has absorbed all the flavors, remove from heat. Fluff the rice with a fork, discard the bay leaf, and serve hot.
